Last night, Señora Rodriguez put me to work assisting her with making Asian Salmon Burgers -"Salmburgers" I call them. They were so yummy and clever.
This time she sent me home with an arsenal of exotic chile peppers ranging from chipotle to a red one so spicy that it came with instructions not to touch it with the fingers. She gave me a grill so I could roast tomatoes and chiles for salsa and taught me how to make a basic green salsa and a red salsa.
Lately, Marco and I had been commiserating that there was not a salsa that was spicy enough or had enough cilantro or garlic, and if we just knew how we could make a better one at home. So Señora Rodriguez has put us up to the task and we are looking forward to giving it a go.

Oh yeah! My Ghetto Surprise tip for the day: Nopales make anything taste better.

Here is a breakfast dish that Marco and I invented:

4 eggs
1/2 cup of nopales
some soyrizo
3-4 cloves fresh garlic
1 tbsp fresh dill
1 serrano chili, minced or finely sliced
onion to taste
hand full of shredded cheddar cheese
corn tortillas

Take a little oil in the skillet and sautée the dill, half your garlic, and half your onion. Add some tortilla strips, soyrizo and stir it around and let it cook up for a couple of minutes. Add the nopales. When they are hot add the eggs and scramble as usual. When it is close to being done add the serano chili, the cheese, and the remainder of the onion. Have your friend heat the tortillas at this stage.
When the tortillas are hot, add the remainder of the garlic and serve.
Don't be shy about adding some Salsa Huichol or another spicy sauce of your choice. It wont hurt my feelings. Let me know what you think.
